Myosol®* is a highly soluble and highly functional liquid potassium phosphate designed to boost the water holding capacity of meat, poultry and seafood, while improving overall quality. Myosol® is a diphosphate and is instantaneously reactive and readily soluble in cold water, and does not require enzymatic breakdown to be functional, which makes it more functional than tripolyphosphates, and improves manufacturing efficiency. It also enables you to reduce the sodium content of your food compared with sodium phosphate.
