For WTI successful products are most often the result of hard work, innovation, persistence, and close consultations with customers. It’s not uncommon for our application specialists to consult with customers on site, where we are better able to observe and evaluate key processes to understand that which affects yield, throughput, shelf life, color, flavor and tenderness.
The next step in the WTI R&D process takes place in our Application Lab and the new state-of-the-art Food Safety Research Laboratory. We modify existing products to meet the many unique demands of our customers. Our process more efficiently satisfies market demands such as the need for sodium reduction, shelf life extension, Clean lLabel, food safety and phosphate alternatives.
Reduced Sodium Content
In recent years, restaurants and retailers have become more concerned about food and health issues, in particular, reducing sodium content. WTI is committed to meeting these needs and is developing and refining low-sodium and sodium-free alternatives to phosphates and antimicrobials used to improve the color, water retention capabilities, and shelf life of processed foods.
Extended Shelf Life
At WTI, we are proud of our research and development work, which has generated food-grade antimicrobials that increase the shelf life of fresh pork, poultry, beef, seafood, fruits,vegetables, and other food products.
Our industry regularly faces dramatic shiftswhich must be met. Today, for example, an increasing number of consumers are demanding natural foods and other products that are free of traditional preservatives and artificial additives.
WTI’s skilled R&D staff continues to develop and refine all-natural, clean label compounds that improve yield, extend shelf life, and improve product color, tenderness, and flavor.
WTI research is being conducted under carefully controlled conditions in the Food Safety Research Laboratory. There we develop innovative ingredient formulations, and modify existing ones to better meet the goals and challenges facing the food industry.
